Huevos Rancheros with Smoked Chorizo

Ingredients

  • 1 tbsp lard or ghee
  • 6 eggs whisked
  • 1/2 yellow onion small diced
  • 2 smoked chorizo chopped
  • salsa
  • avocado

Instructions

  1. Prep your ingredients. Whisk eggs, dice onions, chop smoked chorizo. 

  2. Get out your cast iron skillet and bring the pan to medium heat, add your lard

  3. Once your lard has melted add your diced onions and cook until the start to sweat, about 3 minutes.

  4. Then add your chopped smoked chorizo to the pan. Break up sausage with a wooden spoon or metal spatula. Cook until sausage is browned and onions are translucent about 4 minutes.

  5. Once the onions and sausage are ready to add eggs to the pan and let them set, about 1 minutes. Then stir eggs with a spatula until you have scrambled eggs, about 2 minutes.

  6. Place eggs on a plate and garnish with salsa and avocado. Enjoy your breakfast.
