I’ve have tried countless mayo recipes, especially since I’ve gone lower carb and paleo. They are always tons of work. I used tons of kitchen appliances and I’ve always found the best way to do mayo is to whisk it by hand. But who has time for that? So let’s use some foodjitsu here and make things a little more efficient. All you need is an egg yolk, dijon mustard, coconut vinegar, lemon juice and avocado oil and you can enjoy a thick tasty mayonnaise. Enjoy and I’ll see you in the kitchen!

Back to Basics Mayo

This is my go to mayo recipe with a little bit of foodjitsu thrown in.

Ingredients

  • 1 egg yolk
  • 1/4 tsp dijon mustard
  • 1 1/2 tsp lemon juice
  • 3/4 cup avocado oil
  • 1 tsp coconut vinegar
  • salt and pepper to taste

Instructions

  1. Get all your ingredients out to make sure everything is at room temperature.

  2. Get out Kitchen Aid with Wisk attachment

  3. Place all ingredients except for avocado oil in the bowl and whisk on high for 30 seconds until it's a bright yellow color.

  4. Slowly add oil, a little bit at a time while the Kitchen Aid is on high. Stop when you have a thick mixture.
