Hello, all foodies and fighters! It’s Foodjitsu Friday! Summer is here which means it strawberries time. They are fresh and in season right now so you should better go out and enjoy them. So what to do with all these strawberries? How about dessert but not a lot of sugar? Sometimes you just want something simple and elegant that makes you feel fancy…in comes this recipe. I made this recipe for mother’s day brunch and everyone loved it,
including me. 

 

To take this recipe to the next level I used a great product, Gaea Balsamic & Honey Glaze. It’s an amazing garnish and adds a wonderful sweet and tangy flavor on top of the rich mascarpone cream. Feel free to add it to seafood, steaks, and salads as well this summer I think you’ll really enjoy it.

Strawberries with Mascarpone Cream

Prep Time 5 minutes
Cook Time 5 minutes
Total Time 10 minutes
Servings 4 people

Ingredients

  • 1 pint strawberries sliced
  • 1 tsp lemon zest divided
  • 1/2 cup heavy cream
  • 1/2 cup mascarpone cheese
  • 3 tbsp organic powder sugar
  • 3/4 tsp almond extract
  • pinch sea salt
  • mint for garnish
  • 1 tbsp balsamic honey glaze optional

Instructions

  1. Slice strawberries and throw in a bowl with half of the lemon zest and set aside.

  2. Get out Kitchen Aid with the whisk attachment. Add the rest of the ingredients in a bowl and whisk until light and fluffy.

  3. To serve place strawberries in a cocktail glass with a dollop of cream on top and drizzle with balsamic honey glaze and garnish with mint.
