Happy Belated 4th of July! How did you spend the day of celebrating our nation’s independence? I spent it smoking meat in my new Bradley Smoker. This begs the question…what do I do with all of this leftover smoked meat? Well…I love sausage and I love breakfast…how about easy huevos rancheros with smoked chorizo?

This recipe is super easy especially if you have leftover sausage just lying around. The key to making this recipe super tasty is that you brown the already cooked sausage so that it really extracts the flavor into the eggs. Then you can garnish with whatever you want, salsa, avocado, or both! So I hope you’re ready for this recipe first thing in the morning, I know I am and I’ll see you in the kitchen.
